A Mediterranean breakfast is usually one of three things: yogurt with fruit and nuts, bread with olive oil and something savoury on it, or eggs with vegetables. What decides which one you make is not preference, it is how many minutes you have and whether last night's you did anything to help. Before the list: what breakfast is really like there

Breakfast in most Mediterranean countries is small. Coffee and a piece of bread rubbed with tomato and olive oil in Spain. Bread, olives, feta and maybe a boiled egg in Greece or Turkey. In plenty of households, coffee and fruit and nothing else. The large savoury plate is a weekend or a holiday thing.

They are not a reconstruction of what a Greek grandmother ate at seven in the morning. No-cook: five minutes, nothing switched on

Greek yogurt with fruit, nuts and a little honey. Thick plain yogurt, whatever fruit is in season, a small handful of walnuts or almonds, and honey measured in a drizzle rather than a spoonful. Toasting the nuts in a dry pan once a week, in a batch, is the single upgrade that matters.

Overnight oats with grated apple and cinnamon. Half a cup of rolled oats, an equal amount of milk or plain yogurt, one grated apple, a good pinch of cinnamon and a spoon of chopped almonds. Stir, lid, fridge. Ready by morning and good for two days.

Wholegrain toast with mashed white beans, olive oil and lemon. Half a tin of cannellini mashed roughly with a fork, plenty of olive oil, lemon juice, salt and black pepper, piled on toasted wholegrain bread. Mash a whole tin and the second half is lunch.

Tomato-rubbed toast. A ripe tomato cut in half and rubbed hard into a slice of hot toasted bread until only the skin is left, then olive oil and salt. It takes ninety seconds and it is better than it sounds. Good extra-virgin olive oil is doing most of the work here, which is why this is worth using the decent bottle on.

Yogurt with dates and tahini. Plain yogurt, two chopped dates, a teaspoon of tahini stirred through, a few pistachios. Sweet without being a dessert.

Make-ahead: cook once, eat three mornings

A baked frittata, cut into squares. Eight eggs beaten with salt, pepper and a handful of chopped parsley, poured over roast vegetables and crumbled feta in an oiled baking dish, baked at 180°C / 350°F for about 30 minutes until set in the middle. Cool, cut into squares, fridge. Plan for three days and eat it cold or at room temperature. Savoury oat and greens jars. Rolled oats layered in a jar with a spoon of grated parmesan or feta, a handful of chopped spinach, and salt and pepper. In the morning add boiling water, stir, wait four minutes, then finish with olive oil and a crack of pepper. Savoury oats are a hard sell until you try them with good olive oil on top.

Chickpea-flour pancakes. One cup of chickpea flour whisked with one and a quarter cups of water, salt, and a spoon of olive oil, rested for at least 30 minutes. Cook like thin pancakes in a hot oiled pan, two minutes a side. They keep three days in the fridge, reheat in a dry pan, and hold anything you put on them. Chickpea flour is worth keeping alongside your other dry-store basics.

Baked oats with figs and almonds. Rolled oats, milk, one egg, chopped dried figs and flaked almonds, baked in a dish at 180°C / 350°F for 35 minutes. Cut into portions. Sturdier than porridge and it travels.

A tub of labneh. Plain full-fat yogurt salted and hung in a muslin cloth over a bowl overnight becomes a thick, spreadable cheese. Keep it under a layer of olive oil, spread it on toast, top with za'atar or chopped tomato. Plan for four days.

Hot in ten minutes

Tomatoes and eggs. Half a tin of chopped tomatoes or four halved cherry tomatoes cooked hard in olive oil with garlic and a pinch of cumin for five minutes, then two eggs cracked in, lid on, three minutes more. Bread to mop it up.

Garlicky greens on toast. A big handful of spinach or chard wilted in olive oil with a sliced garlic clove and a squeeze of lemon, piled onto toast with a little grated hard cheese. Four minutes, and it uses up greens that were about to turn.

A fried egg over yesterday's grains. Warm a cup of cooked farro or bulgur in a pan with olive oil until the edges crisp, add whatever roast vegetables are left, and top with a fried egg. This is the reason to cook extra grain on prep day.

Mushrooms with thyme on toast. Sliced mushrooms in a hot pan with olive oil, left alone until browned, then thyme, garlic and salt at the end. On toast, with lemon.

Warm feta and tomatoes. A slab of feta and a handful of cherry tomatoes in a small dish with olive oil and oregano, ten minutes at 200°C / 400°F while you get dressed. Eat with bread.
